Our History
I wanted to create a brand that speaks about Japan.
Bizen means "total beauty" in Japanese, referring to the holistic Japanese approach to beauty. It encompasses inner beauty, spirituality, a deep connection with nature and the seasons, and a different perception of time. It also refers to a healthy culinary culture shaped by an ancient technique: fermentation.
Living in Japan taught me about fermentation, as it's ubiquitous on the Japanese table, from soy sauce to sake to natto, a traditional, virtuous, sticky food with a very strong smell and a taste that's difficult to tame... Fermentation is simultaneously a preservation technique, a way to reveal ingredients beneficial to health, a factor in longevity, and a flavor enhancer. It even has its own magic fungus, koji, a rice ferment that we at Bizen have made our signature ingredient.
It is through all of this that I wanted to talk to you about Japan and I hope you will like it.
